Baked Lemon Butter Tilapia

Tilapia cooks quickly and is easy to store in the freezer, with it being so small - this is a go-to meal when I want to shut my brain off and have something tasty over rice or vegetables without putting in a lot of effort (to be honest).

INGREDIENTS YOU WILL NEED:

  • Lemons - 2

    • Slice one and juice the other one, careful to pick out any seeds.

    • We’ll only need a little over half the lemon juice of one lemon

  • Butter - 4 tbsp

  • Tilapia, thawed - 5 fillets

  • Kosher salt - 1/2 tsp

  • Black pepper - 1/2 tsp

  • Dried Calabrian chiles (alternative: red pepper flakes) - 1/2 tsp

  • Garlic powder - 1 tsp

  • Minced garlic - 1 tsp

  • Smoked paprika - 1/2 tsp

  • Parsley - 1/2 tsp

UTENSILS I’D SUGGEST HAVING:

  • 9x13 casserole dish (any size is fine so long as the fish fit in it)

  • Small bowl

  • Spoon

INSTRUCTIONS:

Preheat? Yes - 400 degrees F (204 C)

  • In a small bowl, melt your butter, then mix in your salt, pepper, chiles, garlic powder, minced garlic, lemon juice (a little over half of one lemon), and parsley

  • Spoon a few tablespoons of this butter mixture in a line inside the casserole dish and then place your tilapia fillets along that line

  • Pour the rest of the lemon butter mixture over the tilapia. Take your slice lemon pieces and place them under, over, and around the fish any way you’d like

  • Sprinkle smoked paprika over the top and bake for 10-12 minutes or until the fish is opaque and flakes well under a fork

  • Enjoy!
