Dorito Pork Nachos
These may be nachos in the loosest sense of the word, but there’s chips, there’s cheese, there’s toppings — I’m in no way claiming they’re original, but they’re damn good.
INGREDIENTS YOU WILL NEED:
Dorito’s (Nacho cheese flavored)
Cheddar or mixed cheese, shredded
Yellow or white onion, diced
Jimmy Dean breakfast sausage “Hot”
Canned green chiles
Sour cream
Pickled jalapenos
Garlic powder
Kosher salt
Black pepper
Olive oil
UTENSILS I’D SUGGEST HAVING:
Sheet pan
Flat spatula
Plastic spoon
Saucepan
Cutting board
Chopping knife
Colander
Small bowl
Tin foil
ORDER OF OPERATIONS:
Chop and cook down onions
Brown meat and drain the grease in a colander
Line sheet pan with tin foil and layer Doritos and meat / veggie mixture
Top with cheese and bake until cheese is fully melted and browning.
INSTRUCTIONS:
Preheat? Yes - 350 Temp
Dice up your onions and sauté them in a pan with olive oil, salt and pepper until they begin to look translucent (5-6 minutes)
Add sausage to the pan, crumble into medium pieces, and brown it with the onions until almost all the way cooked through
Drain the mixture into a colander over a bowl to capture the grease (do not let it go into the sink - it’ll be very bad for your plumbing). Add meat mixture back to the pan and mix in the drained can of green chiles
Line your sheet pan with tin foil and spray with Pam cooking spray to keep the nachos from sticking.
Lay out one layer of Doritos and add half of the meat and veggies mix on top. Top that layer with shredded cheese and add the next layer of Doritos.
Repeat this step with meat and cheese again, taking care to make sure each chip has some mix and or cheese on it so they’re not just plain.
Bake until the cheese is fully melted and has started to brown slightly (about 10-15 minutes). Once it’s cooled down for a minute or two, use your spatula to serve and add as much sour cream and pickled jalapenos as you’d like to each serving (I like a lot!).
